Easy Homemade Beef Chili

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can 15 ounces kidney beans, drained and rinsed
  • 1 can 14.5 ounces diced tomatoes
  • 1 can 6 ounces tomato paste
  • 1 cup beef broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper adjust for desired spiciness
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: shredded cheddar cheese sour cream, chopped green onions, chopped cilantro, or diced jalapeños

Instructions
 

  • In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until it's browned and no longer pink, about 5-7 minutes.
  • Sauté Onions and Garlic:
  • Add the chopped onion to the pot with the browned beef. Sauté for 2-3 minutes until the onion becomes translucent.
  • Stir in the minced garlic and sauté for another 30 seconds until fragrant.
  • Add the diced tomatoes, tomato paste, beef broth, chili powder, ground cumin, paprika, dried oregano, cayenne pepper, salt, and pepper to the pot. Stir well to combine all the ingredients.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the chili simmer for at least 20-30 minutes, stirring occasionally. The longer it simmers, the more the flavors will meld together, so you can simmer for up to an hour if time allows.
  • About 10 minutes before serving, add the drained and rinsed kidney beans to the chili. Stir them in and allow them to heat through.
  • Ladle the hot chili into bowls. You can serve it as-is or top it with shredded cheddar cheese, a dollop of sour cream, chopped green onions, cilantro, or diced jalapeños, depending on your preference.
